Lenten salads for the New Year are a widespread trend nowadays. In recent years, all people who try to adhere to the Nativity Fast have given themselves a “day off” for the New Year, but it turns out that it is quite possible to prepare delicious Lenten dishes.
New Year is everyone's favorite holiday. As a rule, preparation for it takes a lot of time. You need to think carefully about the menu, purchase all the necessary products, and preferably cook at the last moment so that everything is fresh. We must not forget that at this time there will be a Nativity fast, so many people try to limit themselves in food. In light of this, creating a menu becomes a little more complicated, because in order to set a decent Lenten table, you need proven, interesting, tasty and simple recipes.

We are accustomed to seasoning salad ingredients with mayonnaise, which does not fit with fasting at all. But practice has shown that for delicious salads you can safely use special lean mayonnaise, or make your own various sauces based on vegetable oil, garlic, herbs, dry herbs and spices.

Lenten salad Olivier
This salad can be found on almost every table. But there is one drawback - it is not suitable for those who fast. Then pay attention to the recipe with lean mayonnaise.
Ingredients:
- Canned green peas – jar
- Pickled cucumbers – 2-3 pcs.
- Marinated white mushrooms – 200-250 g
- Potatoes – 2-3 pcs.
- Fresh cucumbers – 2 pcs.
- Small carrots – 2 pcs.
- Lenten mayonnaise
- Salt, pepper, herbs to taste
Preparation:
Boil unpeeled potatoes and carrots, then peel and chop into cubes. We also chop pickled and fresh cucumbers, mushrooms, and chop the greens. Mix the ingredients in a salad bowl, season with mayonnaise, pepper and salt. You can decorate with a sprig of greenery.
Fresh cucumbers can be replaced with zucchini or apples, canned peas with green peas (boiled), and porcini mushrooms with other pickled mushrooms.
What foods can you eat during fasting?
Plant foods, fish, seafood. This is the entire list of permitted products for the Nativity Fast. But mushrooms, canned food, dried fruits, honey, nuts, and freezing help. So you definitely won’t go hungry even without animal products.
Adviсe:
- Do not try to immediately take on the strict monastic measure of fasting; it is better to consult with a priest and a doctor who knows your health problems.
- Do not replace high-quality products of animal origin with their lean (chemical store-bought) analogues such as lean mayonnaise, vegetable oil instead of butter, soy products instead of meat and all other nasty things.
- Eat often and in small portions, chew your food well - this will help you get full faster and eat less.
- Eat more salads, cook porridge, compotes, bake Lenten cookies with cucumber or tomato brine, healthy pumpkin and oatmeal cookies, homemade bread, make desserts from dried fruits, nuts, etc.
What can you eat: menu for each day of fasting? The Nativity Fast begins, as always, on November 28th. In 2022 it is Saturday. That is, on 28 and 29 you can eat fish.
New Year's salad "Italy"
You need to start preparing this salad with the dressing in advance so that it has time to brew well. This pasta salad is very filling.
Ingredients:

- Dry oregano – a pinch
- Parsley – ½ bunch
- Basil – 7 leaves
- Garlic – ½ clove
- Pepper – ½ tsp.
- Salt – ¼ tsp.
- Olive oil – 50 ml
- Salad
- Bow pasta – ½ pack
- Pitted olives - jar
- Green beans – 150 g
- Cherry tomato – 8 pcs.
- Canned corn – jar
Preparation:
We make the dressing: sprinkle all the fresh and dry herbs and garlic with salt and pepper, then grind them into a paste in a mortar, add olive oil, grind again and set aside. Boil the pasta (but do not overcook it), drain it in a colander. We also cook green beans in salted water. Drain the marinade from the corn, cut the tomatoes into 4 pieces, and cut the olives in half. Combine all the ingredients and season (you can add salt if necessary).
Vegetable aspic
A bright, fragrant gelatin product will become a real decoration of the Orthodox Lenten table.
The whole highlight of this dish is the unlimited imagination of the housewife, who, at her own discretion and the presence of vegetables in the house, can create a culinary masterpiece.
All vegetables should be cooked until tender, but not overcooked.
A particularly beautiful and tasty vegetable aspic is obtained by adding:
- cauliflower;
- broccoli cabbage;
- carrots;
- green peas;
- zucchini;
- red and green sweet peppers;
- lemon
Cabbage should be disassembled into rosettes before cooking. Boil the carrots whole, peel and cut into circles, from which it is easy to cut out shaped stars. Green peas can be used fresh frozen, which are pre-boiled in salted water, or pickled.
Zucchini and peppers are baked in the oven. The lemon is peeled and cut into small triangles. A jelly solution is prepared based on vegetable broth. Cover a deep bowl or cake pan with cling film and arrange the vegetables, carrot figures, green peas and lemon beautifully so that they are along the edge of the sphere.

Vegetable aspic
Pour the gelatin dissolved in the broth over the vegetables so that it covers the vegetable mixture by 1-1.5 cm, and place in the refrigerator to harden. Before serving, cover the jelly with a flat plate, the diameter of which is larger than the diameter of the finished dish, and quickly turn it over.
A beautiful, deliciously lean New Year's dish is ready.
Lenten Greek salad
This is always a relevant and delicious salad. To make it lean, you can cook it with tofu cheese. Believe me, the taste of the dish will not suffer at all from such a replacement.
Ingredients:
- Salad – 100 g
- Tofu cheese – 100 g;
- Green olives – 15 pcs.
- Cherry tomatoes – 6-8 pcs.
- Sweet red pepper – 1 pc.
- Capers (if desired) – 1 tsp
- Red onion – ½ head;
- Olive oil – 30 ml
- Fresh lemon juice – 1 tsp
- Salt, pepper mixture
Preparation:
We tear lettuce leaves randomly with our hands, cut the pepper into large strips, chop the onion, and cut the cherry tomatoes in half. Leave the capers and olives whole. Mix all ingredients, pour in oil, juice, salt and pepper. Finally, place the tofu slices on top.
Salad “Snow Maiden”
You will love this light and healthy salad made from fresh and juicy ingredients so much that you will cook it all the time.
Ingredients:
- Celery root – 1 pc.
- Carrots – 1 pc.
- Iceberg lettuce – ½ bunch
- Fresh cucumber
- Bell pepper
- Large tomato
- Canned corn – 150 g
- Sesame
- Any vegetable oil for dressing
- Salt, pepper mixture to taste
Preparation:
Cut the cucumber, paprika and tomato into cubes. Tear the salad into small pieces, three carrots and celery root on a coarse grater. Mix the above in a salad bowl and add corn. We fill it all with vegetable oil. Before serving, sprinkle with sesame seeds.
For more flavor, sesame seeds can be lightly toasted in a dry frying pan.
Snacks
Jellied agar-agar made from celery, carrots and asparagus
Jellied is always beautiful and impressive, even in the Lenten version. You don’t have to make a lot of it, or you can even prepare it in portions and serve it on a beautiful plate. For a brighter vegetable taste, carrots and asparagus can be pre-fried in vegetable oil until golden brown.
Quick additions: serve with jellied sauce based on classic mayonnaise.

Lavash rolls always help out the housewife a lot. They are good for everyday snacks and for travel meals, but they also look appropriate on a holiday table. The rolls can be served cold or can be fried in vegetable oil.

Light crab salad
This recipe for a light salad made from everyone’s favorite crab sticks will be a wonderful addition to the holiday table.
Ingredients:
- Crab sticks – 200 g
- Sweet pepper – 1 pc.
- Potatoes – 2 pcs.
- Green onion - bunch
- Lenten mayonnaise
- Salt, pepper, any herbs
Preparation:
Boil unpeeled potatoes, peel and cut. Chop the crab sticks into pieces, chop the bell pepper into large strips, and chop the onion. Mix everything, season with mayonnaise, pepper and salt to taste.
Lenten shrimp salad
The salad is prepared very quickly and easily. This is the place for lovers of seafood and fresh herbs.
Ingredients:
- Peeled shrimp – 250 g
- Arugula – bunch
- Cherry tomato – 6-7 pcs.
- Balsamic vinegar – 2 tbsp. l.
- Olive oil – 2 tbsp. l.
- Clove of garlic
- Salt, pepper mixture to taste
Preparation:
Wash and dry the arugula on a towel. Fry the shrimp in a frying pan (up to 1 minute) in oil mixed with crushed garlic. Place arugula in a salad bowl, add salt and pepper, and drizzle with a mixture of olive oil and balsamic vinegar. Place shrimp and tomatoes, previously cut in half, on top.
Lenten salad “Herring under a fur coat”
A classic recipe for a well-known salad, which uses lean mayonnaise, which is not at all difficult to purchase.
Ingredients:
- Herring fillet – 300-400 g
- Carrots – 1 pc.
- Potatoes – 3 pcs.
- Small beets – 1 pc.
- Onion – 1 pc.
- Lenten mayonnaise
- Salt, pepper, herbs to taste
- Green onions - for garnish
Preparation:
Boil the unpeeled potatoes, carrots, and beets separately, then peel the vegetables and grate them on a coarse grater. Place the potatoes on a plate in a thick layer, pepper and salt, brush with mayonnaise, then place a layer of pre-diced herring on it. Place chopped onions on top of the herring and a layer of carrots and beets on top (these layers should be peppered and salted, greased with mayonnaise). Sprinkle the top with chopped green onions.
If you are not afraid of experiments, you can add a sweet and sour apple to the recipe - peel it, grate it and lay it in a layer on top of the carrots (no need to salt and pepper the apple).

Lenten dough is great for pies, for example, with potatoes. This recipe can be used not only during Lent, but also when there is no milk or eggs at home. Just choose the right potatoes so that they are tasty when boiled.

Cabbage dough buns
The original recipe for these buns belongs to a Florentine restaurant. The cabbage used for them is called cavolo nero, that is, “black cabbage.” In fact, it is not black at all, but dark green and looks not like the usual head of cabbage, but like a bunch of long burdocks. In appearance and consistency, burdock leaves most closely resemble savoy cabbage leaves. Now such cabbage has begun to appear in Moscow markets and it’s great! But we prepare these buns with regular young white cabbage, and it also turns out great.

Pies with rice and green onions + spices
Rice pies are usually also topped with either fish or eggs. What if neither one nor the other is possible? Then add onions and spices, and lots of them!

Spiced rice cakes
Caesar salad"
To get a lean Caesar salad, you should exclude cheese and eggs from the classic recipe. But this will not affect the exclusive taste and aroma of this dish, to which you can always add shrimp.
Ingredients:
- Romaine lettuce - a whole small head
- Medium peeled shrimp – 8-10 pcs.
- Loaf - a piece for crackers
- Dijon mustard – 1 tsp.
- Olive oil – 2 tbsp. l.
- Lemon juice – 1 tbsp. l.
- Garlic clove
- Salt, ground pepper
Preparation:
Cook the shrimp in salted water (2 minutes). Tear the salad into pieces with your hands. Break the bread into pieces and dry in the oven. Crush the garlic and mix with oil, juice, mustard, pepper and salt. In a bowl, mix the salad with shrimp, pour sauce over everything, sprinkle with breadcrumbs.

Ingredients:
- water - 1.5 l.
- honey - 500 g
- yeast - 50 g
- spices (ginger, cloves, allspice, cinnamon)
Preparation:
Boil 500 grams of honey and 1.5 liters of water, constantly removing the foam, add ginger, cloves, allspice, cinnamon, boil again, cool. Dilute 50 grams of yeast, mix with honey infusion, pour into bottles, and place in a warm place for 12 hours. After this, close the bottles tightly and leave in a cool place for 2-3 weeks to mature. You can add 500 grams of cranberry juice to the prepared drink.
Tuna and bean salad
An interesting and aromatic, very satisfying salad that successfully managed to combine fish and legumes. The dish is prepared in a matter of minutes.
Ingredients:
- Canned beans (red) – 400 g
- Red onion – 1 pc.
- Tuna – 200 g
- Fresh dill – 1 bunch
- Olive oil – 3 tbsp. l.
- Wine vinegar – 2 tbsp. l.
- Garlic – 1 clove
Preparation:
Combine oil, vinegar and crushed garlic separately. Marinate chopped onion in this mixture. Chop the greens. In a bowl, mix greens, beans, tuna, season with onion-garlic dressing and stir.
Gourmet salad with shrimp and avocado
This healthy salad can be prepared on days when fasting is not strict and seafood is allowed.
Ingredients:
- Shrimp – 15-20 pcs.
- Avocado – 1 pc.
- Bell pepper (can be replaced with tomato) – 120 g
- Arugula – 70 g
- Salad – 70 g
- Basil – 30 g
- Soy sauce – 25 ml
- Lime – ½ slice
- Olive oil – 30 ml
- Garlic – ½ clove
Preparation:
Boil shrimp (up to 2 minutes). Coarsely chop the pepper and tear the salad into pieces. Cut the avocado into strips. In a bowl, combine lettuce, arugula, basil, bell pepper, avocado, and shrimp. Dress the salad with sauce (to prepare the sauce you just need to mix soy sauce, the juice of half a lime, oil and crushed garlic).
Orange juice
Ingredients:
- oranges - 110 g
- sugar - 120 g
- water - 1 l.
Preparation:
Finely chop the orange zest, add hot water, and boil for 5 minutes. Then leave for 3-4 hours. After straining, add sugar to the broth, bring to a boil, pour in the squeezed orange juice and cool.
Lenten fish salad
A wonderful nutritious dish with smoked mackerel.
Ingredients:
- Mackerel – 1 pc.
- Green beans – 300 g
- Potatoes – 3 pcs.
- Red bell pepper – 1 pc.
- Lenten mayonnaise - if desired
Preparation:
Remove skin and bones from the fish and chop finely. Boil beans and potatoes and cool. Cut the pepper and potatoes (peeled) into large cubes. Mix everything in a salad bowl, add lean mayonnaise if desired. There is no need for salt in this recipe as the fish is already salty enough. The salad can also be peppered if desired.
Salad with seaweed
The main ingredient here is seaweed, so many people don’t try to make it. This product, although useful, is still not for everyone. But know that in such a salad, seaweed is simply unrecognizable.
Ingredients:
- Sea kale – 300 g
- Canned mushrooms (any) – 0.5 l jar
- Crab sticks – 200 g
- Lenten mayonnaise
- Onion – 1 pc.
Preparation:
Chop the onion, cut all other ingredients to the desired size and simply mix in a bowl, and then season with mayonnaise.
Danish salad
The salad is hearty (due to the rice), but is very easy to prepare and tastes very good.
Ingredients:
- Canned corn – 1 jar
- Pitted olives – 1 jar
- Rice - glass
- Sweet pepper – 1 pc.
- Ground pepper, salt
- Lenten mayonnaise
Preparation:
Boil the rice. Cut the olives into halves and the peppers into large cubes. Mix everything in a bowl, add corn, mayonnaise, pepper and salt.
Salad with beets and tofu
An unusually tasty salad with baked beets. If desired, you can add walnuts to the recipe, then the dish will be even more nutritious.
Ingredients:
- Beets – 1 pc.
- Tofu – 200 g
- Fresh champignon mushrooms (or boiled chickpeas) – 300 g
- Green onions – bunch
- Olive oil – 3 tbsp. l.
- Apple cider vinegar – 2 tbsp. l.
- Sugar, salt to taste
Preparation:
Bake the beets and mushrooms in the oven in foil (50 and 20 minutes, respectively). Then cool, peel and cut into cubes. We cut the cheese into pieces. In a bowl, add the filling to the beets: to do this, mix salt, sugar, oil and vinegar. Then add mushrooms and cheese to the beets. Sprinkle with chopped onions.
Homemade marmalade
You will need: 1.5 cups of any fruit juice and 4 tbsp. gelatin.
Preparation. Pour the juice into a saucepan and add gelatin. Let sit for a while to allow the gelatin to swell. Then stir and place the mixture on low heat. Once it thickens, remove the pan from the heat and pour into ramekins or one large pan. Refrigerate for at least four hours. Cut the finished marmalade into pieces.
You can actually celebrate the New Year well, regardless of the amount of food on the table and its nature. The main thing is warm company and a sincere atmosphere, which create a festive mood.
