Radonitsa, what kind of word is this?

Radonitsa, also known as radonitsa, radavnitsa, radolnitsa, radolnits, radoshnitsa, radoshno Sunday is one of the most important days of remembrance of the dead, dedicated to Easter week. In Ukraine, this day is called Graves or Coffins, in Belarus - Navy Day, Radovantsi, Dead Radovanitsa.

As you can see, all interpretations have one thing in common - “glad-” and it seems that “joy” is closest to this, but not everything is so simple. Vasmer 's etymological dictionary , this is an Old Russian word. Radunitsa in the meaning of “wake” is found in the Novgorod and Pskov chronicles. “The most acceptable interpretation is from the original “feast of the joyful Easter remembrance of the dead in connection with the resurrection of Christ” and a rapprochement with “glad-”. Less likely is a rapprochement with “rod-”, which is based on the dialect expression “parent” plural. h. “remembrance day”, “parent” in the meaning of a deceased relative in general, and not just “father, parent.”

It is interesting that in Polesie the holiday is called “Joyful Grandfathers”. This, of all the name options, brings Radonitsa closest to “rejoice.” Let us add that we should not forget that this day is tied to Easter - it is calculated precisely according to Easter Sunday. After all, the main feeling and perception of Easter is the joy of the resurrection of Christ. It’s not for nothing that people say: On Radunitsa they plow until lunch, cry at lunch, and dance in the evening.

Radonitsa and the call of rain

Again, according to the book “People's Rus'”, on Tuesday of Radonitskaya Week, that is, in 2022, May 11, the children “called out” to the first spring rain. From the very morning, the children were watching to see if a cloud would appear in the sky. Experienced weather experts claim that there is no Rodonitsa Tuesday on which at least one drop of rain does not fall. At the first cloud, the kids began to shout out the name: “Rain, rain, get ready for the show!” Let it rain, we’ll go into the bushes, visit Kazan, and take a walk in Astrakhan. Water, rain, on woman's rye, on grandfather's wheat, on girl's laziness, water with a bucket. Rain, rain, let it come down harder, quickly - warm us guys up.”

If it rains on Radonitsa, everyone who sang the chants would throw themselves under the “heavenly water” and wash their faces. People believed that this would bring happiness.

It is believed that Radonitsa is connected with nature. There are a few signs that are good to know:

  • Meet rooks in Radonitsa - summer will be warm and sunny.
  • The day on Radonitsa turned out to be rainy - good news (and not only about the weather).
  • Washing your face with rainwater on Radonitsa means gaining beauty and health for many years.
  • The new moon on Radonitsa means a good harvest. By the way, this sign can be checked this year, because the new moon in May 2022 falls on May 11.
  • Frosts on the night of Radonitsa - the grain harvest will not be rich.
  • In the morning on Radonitsa the sky is purple - predicting wind and rain in the near future.

Radonitsa, 3 sure dishes for this special day

It is known that in the Arkhangelsk province, as in some other regions, early in the morning on Radonitsa, before going to church, a separate table was set for the departed with pancakes, pancakes and eggs, which were painted especially for this day. Only they should not have been red, but yellow or green.

Shanzhki with potatoes and mushrooms for Radonitsa

It is believed that shangi - round open pies with potatoes - came to us from Siberia. In addition to potatoes, they are often prepared with saffron milk caps, which are abundant in the Siberian coniferous forests. However, they are also good with other wild mushrooms.


Shanezhki with potatoes and mushrooms

To prepare 20 pies you need:

  • 600 g potatoes
  • 2-3 yolks
  • 50-60 ml cream with fat content from 33%
  • 500 g of forest mushrooms (ceps, chanterelles, saffron milk caps, milk mushrooms or honey mushrooms)
  • 2 tbsp. l. vegetable oil
  • 1 kg of yeast dough (see recipe here) /recipe/8749/sdobnoe-drozhzhevoe-testo
  • thick country sour cream for serving
  • salt and freshly ground black pepper
  1. For the filling , peel the potatoes, roughly chop them, boil them and drain the broth. Pure into a puree, add the yolks, stir until smooth.
  2. Add cream, salt and pepper. Cool completely.
  3. Cut the mushrooms into medium pieces, fry with vegetable oil for 7–8 minutes, season.
  4. Cut the dough into 50 g pieces and roll everything out into circles 8-10 mm thick. Transfer to a baking tray lined with baking paper and leave for 20 minutes. in a warm place.
  5. Make a well in the middle of each flatbread. Place a layer of puree, leveling it with a spoon so that it does not reach the edge by 2 cm, add mushrooms.
  6. Bake in an oven preheated to 200°C for 20 minutes. When serving, add a spoonful of country sour cream on top and serve the shanezhki hot.

Today, the filling is mainly mashed potatoes or cottage cheese, but it can also be a mixture of buckwheat porridge with chopped boiled egg. After baking, brush them well with melted butter.”


Homemade shangs, shangs for Radonitsa

To prepare 12-14 pies you need:

For the test:

  • 500 g flour
  • 100 ml milk
  • 3 eggs
  • 1 tbsp. l. sour cream
  • 120 g butter

For filling:

  • 500 g potatoes
  • 600 g champignons
  • 1 bunch of your favorite herbs, plus extra for serving
  • 1 onion
  • salt and freshly ground black pepper
  1. For the dough , mix flour, warm milk, 1 egg, sour cream and 20 g of butter into a stiff dough. Roll into a ball, cover with a towel and leave for 30 minutes.
  2. For the filling , boil the potatoes. Add 1 egg, crush with a masher and add salt.
  3. Fry finely chopped onions and mushrooms, add salt and pepper.
  4. In a bowl, combine mashed potatoes and mushroom mixture. Add chopped greens and stir.
  5. Divide the dough into pieces weighing 50-60 g. Roll into flat cakes with a diameter of 10 cm. Place the filling in the middle of each flat cake. Pinch the edges of the shawls in a circle. Brush the pancakes with the remaining beaten egg.
  6. Bake in an oven preheated to 190°C until golden brown, 15-20 minutes.
  7. Pour the remaining melted butter over the finished shanezhki and, if desired, sprinkle with chopped herbs.

Kefir pancakes for Radonice

Kefir pancakes are a real find. They are prepared simply and quite quickly. The resting time of the dough can be reduced if you use warm kefir rather than cold kefir. The most delicious pancakes are made from thermostatic kefir. It can be easily prepared at home: just heat good milk to 30-40 °C, add starter (special or a couple of spoons of store-bought kefir) and stir. Close the container and leave in a warm place for 12 hours.

By the way, if you want, reduce the amount of sugar in the dough to a symbolic teaspoon: then the pancakes can be served not only with sweet fillings, but also, for example, with processed cheese or liver pate.


Kefir pancakes for Radonitsa

To prepare 5-6 servings you need:

  • 1 large egg
  • 2 tbsp. l. Sahara
  • 500 ml kefir with a fat content of 3.5%
  • 350 g flour
  • 0.5 tsp. soda
  • 1 tsp. salt
  • vegetable or ghee oil for frying
  1. Prepare dough for pancakes with kefir. To do this, remove all the ingredients from the refrigerator and leave them on the table. They must have the same temperature. In a large bowl, beat the egg and sugar until fluffy. Without stopping whisking, pour in the kefir.
  2. In a separate bowl, mix flour with baking soda and salt. Pour the flour mixture into the egg mixture and mix thoroughly. Cover the bowl with pancake batter with a towel and leave in a warm place for 20-30 minutes.
  3. Heat a cast-iron frying pan high, lightly grease it with oil, and spoon out the dough by the tablespoon without stirring it. Bake the pancakes over medium heat. Place the finished pancakes in a bowl or pan with a lid. Serve hot.
